APCAFI
APCAFI (Asociación de Productores de Cafés Finos) is an association of coffee producers founded in 2018 in the community of Buena Vista, located in the municipality of La Unión, in the department of Copán. The producers are spread across the Copán appellation, at the foothills of Cerro Erapuca, a mountain peak rising over 2,000 meters above sea level that marks the border between El Salvador, Guatemala, and Honduras. This mountainous environment forms a unique ecosystem in Honduras.
The association has invested in the construction of drying patios and post-harvest processing equipment. Members can bring their coffee cherries or parchment coffee there to carry out the different stages of processing directly within APCAFI’s facilities.
Members of the association farm small and medium-sized plots, all certified organic. The association regularly organises workshops and training sessions on composting, as well as on other agricultural practices compatible with organic certification.
However, the producers’ approach goes beyond simple certification. The association has implemented an innovative program aimed at planting rows of flowers on farms to create protected corridors for pollinators, thereby contributing to the preservation of local biodiversity.

The cherries are hand-picked at full ripeness.
Some producers carry out the processing on their own farms when they have the necessary infrastructure, while others dry their coffee on APCAFI’s patios.
All lots are analyzed and cupped in order to create balanced and harmonious blends.
